Step-by-step cooking recipe

  1. Take minced meat, salt and pepper it to taste, add your favorite spices and mix well.
  2. Divide the finished minced meat into small parts and roll each of them into a tight ball.
  3. Break the eggs into a separate bowl, scramble them with a fork, add milk and olive oil, as well as salt and pepper to taste and mix thoroughly until a homogeneous egg mixture is formed, which ideally should be similar in consistency to liquid pancake batter.
  4. Now the fun part begins - the formation of brizols. Spread cling film over the work surface; it will become your main assistant today. Grease the film with olive or any other vegetable oil, place a piece of minced meat on it, cover with another piece of film on top and, using a rolling pin, roll it into a thin flat cake of uniform thickness, approximately the size of a small shallow plate.
  5. Pour one ladle of the egg mixture into a shallow plate, carefully place the meat pancake on top, film side up, and carefully remove the film.
  6. In one quick, gentle motion, pour the egg mixture along with the meat pancake into the heated frying pan so that the pancake ends up on top of the omelette base.
  7. Fry on both sides, then fold in half with the meat inside and fry again on both sides, bringing the brizol to full readiness.
  8. For the filling, chop a clove of garlic, add it to the mayonnaise, brush the inner surface of the brizoli with the resulting sauce and place finely chopped pickled cucumber there.

    Break the egg into a cup and stir until smooth. Pour the contents of the cup onto a flat plate or saucer.

    Roll out a quarter of the whole minced meat with a rolling pin on a clean countertop with flour. The diameter of the cake should be equal to or slightly less than the diameter of the frying pan.

    Heat a frying pan with vegetable oil. Transfer the minced cake to a plate with the egg. After this, carefully transfer the contents of the plate to a heated frying pan. The omelette should be on the bottom and the meat flatbread on top.

    Fry the egg side of the brizol until golden brown and turn it over to the other side. Fry the meat until completely cooked.

    Roll out the remaining three pieces of minced meat into flat cakes in the same way and fry in the remaining eggs.

  • onion 3-4 small heads,
  • salt, pepper to taste,

Cooking process:

First, let's start with the minced meat. To do this, mix it with chopped onion, salt and pepper.


Now let's prepare a batter of eggs and salt, and drop a few waffles into it, trying to make sure that they are dipped on both sides.


Now take an even number of waffles and place them on a flat dish, board or tray. Place a teaspoon of minced meat in the middle. If you take six waffles, you fill three of them.


Cover the filled waffles with the other halves and carefully pinch the edges, forming solid circles. We do the same with the rest of the waffles.

How to cook brizol from minced meat

To prepare brizol, you can use any type of minced meat. But the most delicious dish is made from pork and beef, taken in equal proportions. Brizol made from such minced meat will be moderately fatty and very juicy. So, grind the meat using a meat grinder or take a ready-made product from the store.


Transfer the minced meat into a deep container, add half an onion, chopped on a fine grater, and mix well with a spoon. Salt and pepper to taste. If desired, you can add your favorite spices, such as a mixture of Provençal herbs. Mix the resulting mass thoroughly until smooth. To ensure that the brizoli filling keeps its shape well, beat the minced meat in a bowl for several minutes.


Divide the minced meat into 3-4 equal parts and form them into balls.


Break three eggs into a separate bowl.


Add 50 ml of milk to the eggs and beat them thoroughly with a fork.


Place a piece of cling film on the table, place the first minced ball on one edge and cover it with the other side.


Using your hands or a rolling pin, roll the workpiece into a thin, uniform layer, about 2 mm thick.


If the shape of your flatbread is far from perfect, fix it with a regular plate. After removing one edge of the film, turn it over and place it on top of the workpiece. For each brizol, 1 egg is used, so they can be beaten separately, while combining with milk. Do what is most convenient for you.


Carefully remove the film from the meat piece.


Heat a small amount of vegetable oil in a frying pan and carefully place the meat and egg into it. This is quite a difficult process. Lightly holding the layer of minced meat with one hand, tilt the plate so that it gently slides into the pan. Adjust the filling if necessary.

  • salt, pepper, mayonnaise - to taste;
  • green onions – 6–8 arrows;

Cooking method:

  • Place the minced meat on a plate, add salt and pepper, and stir.
  • Break an egg into a bowl with minced meat, mix the minced meat well with your hands and divide it into 4-6 parts, depending on the diameter of your frying pan.
  • Grease cling film with oil, place one portion of minced meat on it, after rolling it into a ball. Cover with the other end of the film. Roll out into a layer whose diameter is approximately 1 cm less than the diameter of the frying pan.
  • Break the egg into a clean plate and beat it with a little salt.
  • Place the rolled out minced meat on top of the egg mixture.
  • Grease a frying pan with oil and heat it well.
  • Transfer the omelette with minced meat to a hot frying pan. Fry on one side until golden brown, turn over and fry on the other side.

  • chicken egg – 6 pcs.;
  • milk – 40 ml;
  • mayonnaise – 40 ml;

  • pickled cucumbers – 0.2 kg;
  • olive oil - as much as needed;
  • salt, pepper, fresh herbs - to taste.

Cooking method:

  • Mix the minced meat with the egg, salt and pepper. Divide into 4 portions and roll them into balls.
  • Roll out each ball, placing it between layers of cling film greased with vegetable oil.
  • Break the remaining eggs into a clean bowl. Add milk and salt to them, beat.
  • Grease a frying pan with olive oil and heat it up.

  • salt, paprika - to taste;
  • onions – 75 g;
  • green onions – 4–8 arrows;
  • fresh champignons – 100 g;

Cooking method:

  • Wash the chicken breast, dry it with a towel, and remove the skin. Separate the fillet from the bones, cut each half of the breast (lengthwise) into 2-3 pieces.
  • Place the pieces of chicken fillet on a cutting board, cover with film, and beat.
  • Add salt and paprika to flour.
  • In a separate bowl, beat the eggs.
  • Heat a frying pan, pour a little oil on it.
  • Bread the chicken chops in flour, roll in the egg, and place in a frying pan. Fry on both sides until done.
  • Wash the champignons, dry with napkins, cut into cubes.
  • Peel and finely chop the onion.

  • fillet of pink salmon or other fish – 0.5 kg;
  • chicken egg – 5 pcs.;
  • mayonnaise – 50 ml;
  • fresh herbs, spices for fish - to taste;
  • lemon juice – 20 ml;
  • sour cream – 60 ml;
  • green onions – 50 g;
  • vegetable oil - as much as needed.

Cooking method:

  • Cut the fish fillet into thin slices. Sprinkle with seasonings.
  • Finely chop the greens and mix with mayonnaise. Add eggs, beat.
  • Pour some oil into the frying pan and heat it up.
  • Place the fish pieces tightly in the pan and pour the omelette over them.
  • When the brizol is fried on one side, fry it on the other.
  • Finely chop the green onions.
  • Mix sour cream with lemon juice, add onion, stir.
  • Cover the brizoli with sour cream sauce and fold in half.

When serving, sprinkle the fish brizol with chopped herbs.
